Tatsuyuki Akiyama
Born in 1980 in Osaka Prefecture. He has been involved with Wabiya Korekido since its founding in 2002 and has dedicated over twenty years to perfecting the craft of yakitori. His charcoal-grilling techniques have been largely self-taught, developed over the years through exchanges with numerous Kyoto chefs. He has led and honed his techniques over the grill at Wabiya Korekido. Captivated by the wood-fire cuisine he encountered during his culinary training in Spain, he launched wabiya in 2023. He crafts singular dishes over an open flame, bringing out the best in the chicken and vegetables of the day.

Shu Nakatani
Born in 1995 in Kyoto Prefecture. After managing Wabiya Korekido, he assumed the role of sommelier at wabiya. Holds both Sommelier and J.S.A. SAKE DIPLOMA certifications. Approaching food and beverages as a single course, he has a deep understanding of ingredients, cooking techniques, aromas, and sauces, crafting pairings that bring out the best in both. He aims to cultivate a comfortable, relaxed dining environment that is suitable for every guest.
